WHAT WE STAND FOR

What sets us apart

Every piece of wagyu that leaves our plant carries the same marks: documented origin, hand-cut craftsmanship and a cut that suits the dish it is meant for.

Origin

Sourced directly from two selected Japanese prefectures: Gunma (群馬) and Oita (大分). Every animal with an individual ID and pedigree record.

More about origin

Processing

Precision cutting in the Japanese tradition, in our own EU-approved plant (DE-HE 10510-EG). Steak, sushi cut, yakiniku, slices — every part goes where it works best.

Built around you

We ask first: which dishes, what portion size, how often? The cut is then built around your answers — not the other way round.

KABUKI FEINKOST

A Japanese meat plant in Germany.

In our EU-approved plant we cut Japanese wagyu with the same technique used in Japan. We deliver Europe-wide to restaurants — even in small quantities.

KABUKI Feinkost is a meat processing plant in Germany run by a Japanese master butcher, specialising in the precision cutting of Japanese wagyu.

We divide a single block into different uses, judging the quality of the meat and the structure of each muscle. See examples

Our roots are in the kitchen: KABUKI has run a teppanyaki restaurant in Frankfurt since 1989 and has worked with Japanese wagyu there since 2014. In 2022 this became a company of its own, KABUKI Feinkost GmbH. Today we import more than two tonnes of Japanese wagyu every month and process it in our own EU-approved plant.

ORIGIN

Two prefectures — Gunma and Oita.

We source exclusively from two selected Japanese prefectures: Gunma (群馬) in central Honshū and Oita (大分) on Kyūshū — home of Oita Wagyu.

From Gunma comes Toriyama Umami Wagyu, raised at the foot of Mt. Akagi and certified to Farm HACCP and JGAP. From Oita comes Oita Wagyu — meat quality grade 4 and above only, in the century-old tradition of the Bungo breed.

Every animal is documented with an individual ID and pedigree record. Transport is refrigerated without interruption, from the Japanese abattoir to our plant.

PROCESSING

One block. Many uses.

Why our restaurant clients order wagyu ready-cut instead of breaking down a whole block themselves — with real figures from more than 1,300 cutting jobs in our plant.
